Fill a rocks glass to the top with ice cubes
Place 10 mint leaves and 1 bar spoon of granulated cane sugar into a shaker
Pour in 0.5 oz of quail egg white, 0.5 oz of lime juice, 0.35 oz of sugar syrup and 1.5 oz of white rum
Add 1 dash of Angostura bitters
Fill the shaker with ice cubes and shake thoroughly
Finely strain into the rocks glass
Garnish with mint leaves
Serve with a 1.5 oz of champagne
