Gently roll 8 mint leaves between your hands and place them into a shaker
Add 0.5 oz of quail egg white, 0.5 oz of orange juice, 0.75 oz of lime juice, 0.75 oz of sugar syrup, 30 ml of amaro and 1 oz of gin
Give it a good dry shake
Fill the shaker with ice cubes and shake again
Strain into a chilled champagne saucer
Garnish with star anise
