Fill a rocks glass to the top with crushed ice
Place 5 arugala leaves, 6 apple wedges into a shaker and muddle
Pour in 0.5 oz of lemon juice and 0.75 oz of yellow apple liqueur
Add 1 dash of Angostura bitters
Fill the shaker with ice cubes and shake
Finely strain into the rocks glass
Top up with champagne and stir gently
Top up with crushed ice
Garnish with a fan of apple wedges and rucola leaves
