Cut a coconut in halves and remove the pulp
Fill a cocktail glass halfway with crushed ice and then place a coconut shell in it
Place a half of a peeled and chopped pineapple wheel and 6 bar spoons of coconut cream into a blender
Pour in 0.75 oz of sugar syrup and 2 oz of white rum
Give it a good dry shake
Add some crushed ice and blend again
Pour into the coconut shell
Top up with crushed ice
Garnish with a piece of pineapple and a red Maraschino cherry on a cocktail skewer and pineapple leaves
