Place an ice cube into a cocktail glass
Place 3 small pineapple wedges into a shaker and muddle
Pour in 1 oz of lemon juice, 0.5 oz of homemade fructose syrup and 2 oz of white rum
Add 5 dashes of homemade cardamom bitters
Fill the shaker with ice cubes and shake
Finely strain into a chilled champagne saucer
Garnish with a lime leaf and wrap the glass with kraft paper
