Squeeze 1.25 oz of cucumber juice and pour it into a shaker
Add 1 oz of quail egg white, 0.5 oz of lime juice, 1.25 oz of apple juice and 0.75 oz of homemade cinnamon syrup
Give it a good dry shake
Fill the shaker with ice cubes and shake again
Strain into a chilled champagne saucer
Garnish with a slice of cucumber
