Pour 1 oz of lychee liqueur, 1 oz of homemade poppyseed vodka and 1 oz of homemade lavender vodka into a shaker
Fill the shaker with ice cubes and shake
Strain into a chilled champagne saucer
Place 8 peeled and pitted lychees into a juicer and make fresh lychee juice
Pour 2 oz of still water, 4 oz of lychee juice and 0.25 oz of rose syrup into a bowl
Add a pinch of lecithin
Whisk until foam appears
Garnish the cocktail with the resulting foam
