Place a wheel of lemon grass stalk into a blender and pour in 0.15 oz of sugar syrup
Blend and pour the resulting fresh puree through a sieve into a milk pitcher
Add two halves of a cinammon stick, 1 clove, 0.15 oz of lemon juice, 0.15 oz of ginger root juice, 1 oz of honey and 5 oz of boiling water
Stir while heating, but do not bring to a boil
Pour through the sieve into an Irish coffee glass
Add a pinch of ground nutmeg
Garnish with a lemon wedge and a stalk of lemon grass
