Rim a cocktail glass with granulated cane sugar
Pour 5 quail egg yolks, 0.15 oz of heavy cream, 0.35 oz of sugar syrup, 0.5 oz of Pedro Ximenez sherry and 1 oz of bourbon into a shaker
Add 1 dash of Angostura bitters
Fill the shaker with ice cubes and shake thoroughly
Strain into the chilled cocktail glass
