Fill a rocks glass to the top with crushed ice
Place seeds from half a pomegranate and 10 mint leaves into a mixing glass and muddle
Pour in 1 oz of lemon juice, 0.5 oz of honey syrup, 0.15 oz of homemade vanilla syrup and 2 oz of bourbon
Fill the glass with ice cubes and stir gently
Finely strain into the rocks glass
Top up with crushed ice
Garnish with mint leaves and a small pomegranate wedge
Use a julep strainer to make the cocktail easier to drink
