Homemade modena cordial

Fabio La Pietra’s recipe, good for 10 oz: place 1.5 oz of Parmesan rinds into a saucepan and cover with 5 oz of water. Bring to a boil, then cool. Filter the liquid into a separate container, add 50ml of white wine vinegar, and store in the refrigerator.
