According to Yared Hagos’ recipe, good for 30 oz: put 25 oz of frozen red berries mix, 12 oz of sugar and 10 oz of gelling sugar into a saucepan. Add 4 cinnamon sticks, 4 teaspoons of cardamom seeds, 10 pieces of star anise, 4 teaspoons of ground nutmeg and 5 vanilla pods. Heat until the sugar dissolves and leave to infuse overnight. Strain the mixture and store in a glass jar.
